Abstract

Through autobiographical narrative inquiry into the experiences of five teacher educators, we illustrate an alternative way of educating teacher educators. We show how learning to be, and become, a teacher educator occurs within a particular knowledge landscape at the Centre for Research for Teacher Education and Development (CRTED) at the University of Alberta. Drawing on a conceptualization of both personal and professional knowledge landscapes (Clandinin, Schaefer, & Downey, 2014), we highlight 13 features of the CRTED knowledge landscape that were particularly salient in the shaping of two of the authors’ practices as beginning teacher educators. The CRTED knowledge landscape differs from dominant university professional knowledge landscapes and is a kind of counterstory (Lindemann Nelson, 1995) that shapes the knowledge of teacher educators in distinct ways, that is, ways that call them to attend to lives, to stay open to diverse ways of knowing and being, and to the importance of response. Through learning to be and become a teacher educator within the CRTED knowledge landscape, we show how, within this landscape, teacher educators learn to shape different knowledge landscapes with teacher education students, through enabling them to learn to attend to personal knowledge landscapes, within teacher education and future classroom spaces, knowledge landscapes in which living, telling, retelling, and reliving stories of experience with one another is education.

Abstract

Purpose

This study aims to empirically examine young tourists’ perceptions of object-based authenticity, existential authenticity and perceived value perceptions on satisfaction. Data were collected from young heritage tourists at the Little India heritage precinct in Singapore.

Design/methodology/approach

Qualitative data were collected via a pen and paper questionnaire at Little India in Singapore. Young tourists below 30 years of age were identified to complete the questionnaire. A total of 288 sets of valid responses were collected to perform statistical analysis to test the relationships between the key constructs in the research model.

Findings

The results of the study reaffirmed the application of the perceived value framework to authenticity. Object-based authenticity, existential authenticity and perceived monetary value yielded significant and positive effects on overall perceived value and, subsequently, satisfaction. Further, overall perceived value was found to mediate the relationships between object-based authenticity, existential authenticity and perceived monetary with satisfaction.

Research limitations/implications

This study provides researchers with a better understanding of authenticity and value perceptions of young tourists. It also lends further support for the integration of object-based and existential authenticity into the multidimensional approach to perceived value.

Practical implications

The results help destination marketers and policymakers better understand this important segment to develop more effective and sustainable marketing and management strategies.

Originality/value

This study addresses the lack of research in the literature on young tourists who will shape the tourism landscape of the future. It also further assesses the propriety of integrating authenticity measures into the measurement of perceived value.

Abstract

Purpose

This paper aims to demystify the creative experiences of an extraordinary group of pastry chefs – The Malaysian World Pastry Team, champions of the 2019 World Pastry Cup. The authors adopted an expressionist theoretical lens informed by two aesthetic philosophers – John Dewey and Wassily Kandinsky.

Design/methodology/approach

A two-year portraiture was conducted – a qualitative methodology that draws features from phenomenology and narrative inquiry, rendering artistically and empirically written “portraits” that reflect themes and patterns of participants’ experiences. In-depth interviews, observations and material artifacts were collected amid a journey alongside nine extraordinary Malaysian pastry chefs.

Findings

Presented in story structures, the authors offer three “portraits” of culinary creativity, each representing a core essence of the creative phenomenon: creative harmony in the form of sensorial and symbolic poetry; imaginative episodes as a hypnotic state of inspiration and incubation; and the creative duality of scientific rationalism and artistic fashion. The authors delineated the intricacies of each theme by presenting them as individual narratives.

Research limitations/implications

The portraits indicated that culinary creativity reflects an organic and emancipating aesthetic experience that is unbounded by formative structures or sequential processes. This provides a novel theoretical view that moves beyond conventional studies’ capitalistic frameworks, and toward the intimate viewpoints of the chef-creators. Specific contributions are discussed.

Originality/value

Through a unique qualitative approach and an aesthetic theoretical framework, this study provided a novel perspective on the culinary creative process. The aesthetic view captures culinary creativity through the eyes of the creator, a viewpoint less considered, yet imperative to the culinary profession.

Abstract

Purpose

This paper aims to test whether passive Wi-Fi visitor analytics is a useful and effective method to measure consumer engagement towards food trucks located within an outdoor activation area at an Australian metropolitan university.

Design/methodology/approach

Using passive Wi-Fi visitor analytics to ping and track smart devices, data was collected over 90 weekdays capturing data from 522,548 unique smart devices.

Findings

The data collected in this feasibility study was able to identify the most and least popular food trucks by displaying the differences in both bounce and engagement rates, suggesting that passive Wi-Fi visitor analytics are feasible and useful in this context. Furthermore, the results also demonstrate that food truck vendors and marketers should not engage in random rotation, but instead remain static to try and increase familiarity.

Originality/value

Current visitor tracking technology (i.e. ticketed sales, sales data and survey) is limited as it may not provide an accurate measurement of foot traffic, identify engaged patrons who passed by but did not complete a purchase and be available due to commercial sensitivity and confidentiality. Thus, the current research is the first to examine customer engagement (i.e. unengaged walk-by vs engaged but bounced vs engaged sales) with food trucks within an activation area by using passive Wi-Fi visitor analytics.

Abstract

Purpose

Informed by Mihaly Csikszentmihalyi’s systems view of creativity and Chad Borkenhagen’s conceptualization of open source cooking, this study explored how a group of extraordinary pastry chef used Instagram to openly express creativity, disseminate knowledge and reveal culinary secrets. The subsequent impacts of such actions were also assessed.

Design/methodology/approach

A qualitatively driven mixed-method approach was conducted using a nested mixed-method design. A total of 2,456 Instagram posts were visually analyzed alongside a series of interviews with elite pastry chefs over a two-year period.

Findings

Analysis distilled three themes that delineated how elite pastry chefs express creativity and share knowledge mindfully, ethically and altruistically on Instagram. The findings also converged to form a new theoretical model, “systems view of culinary creative sharing,” which accounts for the multifaceted considerations of culinary knowledge sharing on social media.

Research limitations/implications

Findings converged to form a systems view of culinary knowledge sharing. This is peculiarly useful for scholars who are interested in developing a greater understanding about “where and how” creative ideas and knowledge originate, disseminate and receive corroborations in the contemporary digital era.

Originality/value

This study highlighted that a new praxis of open sharing looms large in the culinary profession. This praxis symbolizes a movement away from the traditional mindset of safeguarding culinary secrets and toward a more transparent and open philosophy toward knowledge sharing in the culinary community.

Abstract

Purpose

The purpose of this study is to investigate the motivations, attitudes and intentions towards luxury dining in airplane themed restaurants (ATRs). The moderating roles of desire to fly, desire for luxury and fear of missing out (FOMO) towards attitude and intention to embark on this ATR experience are also investigated.

Design/methodology/approach

Data are collected through a consumer panel. A total of 315 valid responses were analysed using exploratory factor analysis, confirmatory factor analysis and multi-group moderation. To enhance ecological validity, a stimulus for the Singapore Airlines A380 Restaurant @Changi was created to ensure complete understanding of the product offering by the participants.

Findings

Three motivation factors were discovered – novelty, escape and supporting reliving. Interestingly, it was also found that the attitude towards ATR partially mediated the relationship between supportive reliving and intention towards ATRs. Disposition towards FOMO was found to moderate the effect of attitude towards ATR on intention towards ATR. Negative effect between escape motivation and attitude towards the ATR from the moderation analysis for desire for luxury and desire to fly shows that people are still hesitant to accept the ATR as a replacement to satisfy their salient needs for luxury travel.

Practical implications

Insights of this study demonstrate that local airlines could pivot their business through innovative offerings during the pandemic. The ATR concept can be effectively marketed by appealing to hedonistic and nationalistic needs and to avoid positioning it as an alternative for flying.

Originality/value

This is a novel concept introduced during the COVID-19 pandemic. Unprecedentedly, it uncovers the motivations, attitudes and intentions towards luxury dining in ATRs as a means to compensate for the pent-up desire to relive the experience of air travel.

Abstract

Purpose

The purpose of the study is to investigate the effect of terminal and instrumental values on the attitude and brand desirability for upcycled luxury designer facemasks, in relation with generic luxury designer facemasks.

Design/methodology/approach

A quantitative approach was adopted in this study, and data were collected via an online consumer panel from 390 existing Australian luxury consumers, aged 18 and above. Stimuli that represented the two upcycling conditions (remnants and past collections) and a control condition (generic product) from an actual Burberry-branded facemask were designed for the study. The collected data were analysed using the least partial square and multi-group analysis of the structural equation model

Findings

The findings indicate that consumers do not perceive Burberry facemasks made from upcycled remnant materials and previous collections have superior aesthetic or self-expressive benefits to them when compared to the generic Burberry masks. In the same vein, both upcycled categories do not provide superior instrumental values through economic benefits or safety when compared to the generic Burberry masks. Hence, terminal and instrumental values had no influence on the attitude and brand desirability for upcycled luxury designer facemasks, in relation with generic luxury designer facemasks.

Practical implications

The results indicate that strategies will have to be better designed to have a balance between safety features (as opposed to fashion) and luxury desirability of the brand to better capture the market for difference consumer values for the facemasks. As this is a relatively low involvement product, the pricing strategies must be re-evaluated.

Originality/value

This study offers empirical support for the proposition that different upcycling methods in the name of sustainable practices may have different functions for different consumer values in luxury marketing implementations. For the choice of facemasks during the COVID-19 pandemic, it provides empirical evidence for consumer choice for the different types and how it can be used to elevate luxury brand desirability.

Abstract

Purpose

The purpose of this study is to examine how the liability of foreignness (LOF), choice of incorporation and an institutional change independently and jointly affect a reverse merger (RM) firm’s capital-raising performance.

Design/methodology/approach

The study draws on the data of shell reverse merger transactions in the USA from 2007 to 2016.

Findings

This paper finds that LOF and the choice of incorporation as a signal have a significant effect on RM firms’ capital-raising performance. In addition, this study finds that the effectiveness of the signaling can be affected by LOF. Finally, this paper finds that an institutional change that lowers the entry barrier to the initial public offering (which is a superior alternate to an RM) affects the impacts of LOF and signaling on RM firms’ capital-raising performance.

Originality/value

The study contributes to the international business literature by examining the RM (which has been an under-researched topic in the literature) by drawing on the LOF framework. The study finds that LOF and the choice of state for incorporation affect RM firms’ capital-raising performance; moreover, these relationships are affected by an institutional change.

Abstract

Purpose

This paper aims to examine how nostalgia influences travel attitudes and intentions of tourist destination among travellers with Italian heritage. Perceived travel risks as a moderating role between the relationships between personal and historical nostalgia and travel attitudes are also examined.

Design/methodology/approach

A self-administered mail survey was used, targeting Australians of Italian heritage, to investigate the influence of nostalgia on attitudes and intentions to visit Italy as a tourist destination. A total of 218 usable responses were used for analysis. Exploratory factor analysis was utilised to assess the dimensionality of the constructs, and regression analysis was used to test the hypothesised relationships in the research model.

Findings

On analysis of the data collected through a mail survey, results showed that only personal nostalgia was found to exert a positive influence upon travel attitudes which in turn was positively related to travel intention toward Italy. Perceived travel risk factors did not moderate the relationship between personal nostalgia and travel attitudes. However, a negative relationship was found between perceived travel risk and travel intentions towards Italy.

Practical implications

The findings provide further validity to the personal and historical nostalgia scales as a means of understanding motivations to visit a tourist destination. Such findings are significant in adding destination managers and policymakers in developing marketing executions and policies that seek to capitalise on the nostalgic sentiments of the target segments. This study further contributes to the literature on perceived travel risks by highlighting its moderating effect on nostalgic motivations and travel attitudes.

Originality/value

This study aimed to enrich the theoretical base of the tourism discipline by reviewing the significance of personal and historical nostalgia as travel motives and their impact upon a tourist’s travel attitudes and intentions. It also examines the moderating role of perceived travel risks in an empirical model. Further, the current study is the first of its kind to empirically examine personal and historical nostalgia within a leisure travel context.

Abstract

Purpose

This paper addresses the strategic industry challenge relating to new education frameworks. The paper identifies key digital literacy and employability skills that students and educators need to develop to better understand and negotiate the changing, digitally focused landscape of the hospitality and tourism industry (HTI).

Design/methodology/approach

Content analysis was conducted on relevant literature related to digital technologies and employability skills. In particular, the paper explores the role of digital literacy and employability skills in an emerging digital economy and the disruptive impacts on hospitality and tourism operations.

Findings

There are three key findings related to digital literacy skills and technologies: industry practitioner perspectives, employability skills and experience economy services and disruptive digital innovations. These findings are conceptualised to craft an innovative framework for technology-driven hospitality and tourism curriculum development. The framework developed in this paper will be of interest to both hospitality and tourism educators and managers in the increasingly digitalized Malaysian HTI.

Originality/value

This paper presents an innovative, collaborative framework for hospitality and tourism curriculum development in education and industry to identify and develop the required digital literacy and employability skills.
